March has been a nice month. We got to spend a lot of time with family and friends and it is sandwiched in between 2 of the busiest months for my hubby and I . Our February was just crazy with work trips, travel, doctors appointments. Take a look at this spread! Whew!! Thank goodness I have my planner to keep me organized!
March was much calmer but April is starting to get quite filled up as well. We have 3 birthdays through the month. My husband is heading to Punta Cana for a work trip (can I say jealous!) and I am even heading into Phoenix to attend a graduation for our students. Then I head out to Florida for a work conference. Luckily, my hubby is meeting me halfway into that trip and we are taking a MUCH needed vacay in Miami. We will be there for 4 days and I am SUPER excited. I have never been to Miami so if there are any suggestions on things to do and places to eat, certainly let me know! I plan to document the trip for all of you and hope to have some great updates after our trip about how relaxed and rejuvenated I am (wishful thinking I know :)) Wow just typing that all out is making me tired but we are fortunate enough to have the opportunity to do some traveling and did I say I am SUPER excited for our vacation!??!
New Food I made in March:
German Oven Pancake – I found this recipe on pinterest and have made it now 4 times just this month, it is THAT good. To be honest, I think it tastes like a cross between a pancake and french toast. It is easier to make than individual pancakes where you are sitting over the stove and flipping them and by the time you want to eat, many are gone. Or is that just in my house?? This can be on the table from scratch in 20 minutes and I know your family will love it. Thank you Alyssa from the Recipe Critic for the recipe.
Crispy Cauliflower Cakes with Herb Dressing and Arugula Salad – This meal was SO delicious! It was definitely my favorite of the month. I love cauliflower so loved learning of a totally different take on how to make it. My husband liked it as well and it was fun to make too. This is definitely going into my meal planner binder and will be back on rotation soon. I am craving them now just writing about them.
Spinach and Ricotta Gnudi – I really enjoyed this and my hubby said it was one of the best things I ever made. In fact, I passed the recipe along to my mother and she and my father enjoyed it as well. Definitely try it out. A gnudi is just a NUDE RAVIOLI. Essentially a ravioli without the pasta so just the filling. YUM!
Braided Nutella Pastry – I made this dessert to bring to my parents for Easter and while it was beautiful and tasty I am on the fence if it is good enough to warrant the work that is involved in making it. It took some time making the dough, letting it rise, rolling out the dough circles, etc. Try it out and let me know what you think!
Things I Loved in March:
Reliving my Mardi Gras Days! My best friend and I were fortunate enough to get to go to Mardi Gras 2 times! I will tell you that I still say that the first year we went to Mardi Gras was one of the best times of my life! It has been almost 10 years since we went, and I dont think I can do it quite the same again (I know my body would agree with that sentiment) but New Orleans is still a beautiful area to visit and I tell anyone in their 20s that they should do Mardi Gras before they are too old to enjoy it.

Seeing my puppy grow up! I didn’t realize how much I could fall in love with that cute fluffy dog but he has really moved his way right into our family and into our hearts and now I can’t imagine our home without him.
Watching the first of the spring flowers pop up. I am SO OVER this winter! I want the spring here in full force. The fresh air just feels so good right now especially after what wasnt the nicest of winters for me and my hubby.
March is almost over. Bring on April 🙂 April Showers Bring May Flowers! May is my favorite month. Its beautiful weather and its my birthday month!!!
