Asparagus is undoubtedly one of my FAVORITE vegetables and funny enough I only started eating it about 5 years ago. When I was younger I used to tell my mom it tasted too “green” —whatever that means! I was a picky eater. Sorry Mom! Now I feel like I missed out because I pick up asparagus every week at the store but we are finally in the Spring season and the asparagus in the stores looks delish!
My favorite way to make asparagus is to roast them! Trim the ends, put them in a pan with some olive oil and lemon zest and lemon juice. When they come out of the over sprinkle with some more lemon juice and some freshly grated parmesan cheese….YUM!
