Hi Everyone! My husband and I just got back from our short vacation in Miami. The beginning of last week I was at a conference in Orlando and mid-week I traveled to Miami to visit one of our school campuses and then my hubby met me there. I was so happy to see his face! For now, we are getting excited for the fresh flavors of spring and can’t get enough of a delicious tomato and mozzarella salad! To be honest, a Caprese Salad has always been one of my top 5 favorite meals and I was SO excited to dig into a Caprese Salad when my husband and I were in Capri for our honeymoon..but unfortunately it didnt work out as well as we had planned. To make a long story short, we chartered a boat and were so thrilled to tour the Mediterranean on a private yacht. Just my hubby and I. We didnt last more than 15 minutes until my husband was a weird shade of pale and felt like he was going to be sea sick. The boat really was moving fast and we havent been on many boats in our lives but we really should have planned better maybe with some sea sickness medicine or something. We ended up docking the boat in Capri and from there just tried to recover for our boat ride back. Once I stepped my foot on land in Capri the motion sickness hit me and although we did order a Caprese Sandwich, we were just nibbling at it. Such a sad story!!!! One day we will need to get back and better plan so that we can really enjoy a caprese salad in Capri! 🙂

We can recreate this delicious dish ourselves and I was hesitant to even post about this because it really is the most simple salad to make, but I figured if I love it so much I wanted to pass the love along 🙂
Try it out for yourself! My husband requests it at least once a week as a quick lunch or a nice side dish for a pasta dish. You cant go wrong with the delicious flavors of fresh mozzarella, basil and tomatoes. There really isnt a full recipe for this dish and it can be altered to your tastes but the important part of the dish is to find the freshest ingredients as you can! If you have a local farmers market, this is a great time to check it out!

Good Course Salt
Good Extra Virgin Olive Oil – This is one that we love!
Good Balsamic Vinegar – Check this one out! We use it on so many things to add a nice touch of sweetness and acid to cut through rich dishes.
How to assemble the salad
1 – Start by either cutting up the tomatoes and mozzarella into small pieces or slices and arrange them on the dish as you want.
2. Drizzle the whole salad with good quality Extra Virgin Olive Oil and Balsamic Vinegar. Remember, a little goes a long way with the vingear. That is it! Mangia and Enjoy! 🙂
3 . Roll a few basil leaves into a little log and slice creating a chiffonade or little basil confetti 🙂 Sprinkle the tomatoes and cheese with course salt.
